Salsa Verde Chicken Casserole

Ingredients
- 3 Large Cans Shredded Cooked Chicken
- 1 Cup Sour Cream
- 1½ Cups Green Salsa, Divided
- 8 Corn Tortillas, 6”
- 2 Cups Tomatoes, Chopped
- 2 Cups Monterey Jack Cheese, Shredded
- Optional Toppings: Additional Green Salsa, Avocado Slices, Thinly Sliced Green Onions and Fresh Cilantro
Cooking Instructions
- In a small bowl, combine the chicken, sour cream and ¾ cup of salsa.
- Spread the remaining ¼ cup of salsa on the bottom of a greased 8” square baking dish.
- Layer with half the tortillas, chicken mixture, tomatoes, cilantro (optional) and cheese.
- Repeat layers with the remaining ingredients.
- Bake uncovered at 400° until bubbly, about 20-25 minutes.
- Serve with remaining salsa and toppings of your choice.
