Blackened Fish

Ingredients

  • 4 6-oz. Catfish Fillets (Can Substitute Flounder or Tilapia)
  • 1 Stick Butter
  • 2 Lemons, Halved
  • 1 Tbsp. Garlic Powder
  • 1 Tbsp. Onion Powder
  • 1 Tbsp. Paprika
  • 1 Tbsp. Black Pepper
  • 1 Tbsp. Kosher Salt
  • 1 Tbsp. Dried Thyme
  • 1 Tbsp. Dried Oregano
  • ½ tsp. Cayenne Pepper

Cooking Instructions

  • First, mix all your spices together and store in a jar or a shaker if you have one.
  • Take a cookie sheet and lightly sprinkle the pan with the spice mixture.
  • Melt your butter, but do not allow it to separate.
  • Dip the fish fillets in the melted butter, lay them on the cookie sheet in the spices, then coat the top of the fish heavily with the remaining spice mixture; transfer to the fridge for 30 minutes.
  • Heat your cast-iron skillet over high heat – make sure it’s hot!
  • Remove the fish from the fridge and dip back into the melted butter before placing into the skillet.
  • Cook the fish for about three minutes per side and squeeze the lemon juice over the fillets.
  • Remove from the pan and serve with dirty rice, squash or side of your choice.
