Blackened Fish

Ingredients
- 4 6-oz. Catfish Fillets (Can Substitute Flounder or Tilapia)
- 1 Stick Butter
- 2 Lemons, Halved
- 1 Tbsp. Garlic Powder
- 1 Tbsp. Onion Powder
- 1 Tbsp. Paprika
- 1 Tbsp. Black Pepper
- 1 Tbsp. Kosher Salt
- 1 Tbsp. Dried Thyme
- 1 Tbsp. Dried Oregano
- ½ tsp. Cayenne Pepper
Cooking Instructions
- First, mix all your spices together and store in a jar or a shaker if you have one.
- Take a cookie sheet and lightly sprinkle the pan with the spice mixture.
- Melt your butter, but do not allow it to separate.
- Dip the fish fillets in the melted butter, lay them on the cookie sheet in the spices, then coat the top of the fish heavily with the remaining spice mixture; transfer to the fridge for 30 minutes.
- Heat your cast-iron skillet over high heat – make sure it’s hot!
- Remove the fish from the fridge and dip back into the melted butter before placing into the skillet.
- Cook the fish for about three minutes per side and squeeze the lemon juice over the fillets.
- Remove from the pan and serve with dirty rice, squash or side of your choice.
