Cajun Corn Maque Choux

Ingredients

  • 1 Tbsp Olive Oil
  • ½ lb. Smoked Sausage (sliced ¼" thick)
  • ¼ Cup chopped Onions
  • 2 lbs Sweet Cut Corn
  • 1 Tbsp Garlic
  • ¾ Cup Green Bell Peppers
  • 1 Tsp Salt
  • 1 Tsp Red Pepper
  • ¾ Cup Fresh chopped Tomatoes
  • 1½ Cups Heavy Cream
  • ½ Cup chopped Parsley

Cooking Instructions

  • In a large skillet with olive oil over medium heat, render the sausage for 10 minutes
  • Add onions, corn, garlic, and peppers, stirring occasionally for 10 minutes
  • Season with salt and pepper
  • Add the tomatoes and cook, stirring occasionally for 15 to 18 minutes or until the corn is tender
  • Stir in the cream and simmer for two to three minutes or until the sauce coats the back of spoon
  • If necessary, add more salt and pepper
  • Stir in parsley
  • Serves 10 people
