Big Easy Jambalaya

Ingredients
- 2 Cans Shredded Cooked Chicken
- 1 Onion, Diced
- 1 Bell Pepper, Diced
- 3 Stalks Celery, Diced
- 1 Can Rotel, Drained
- 1 Package Smoked Sausage, Sliced
- 1½ Cups Rice, Uncooked
- 3 Cups Chicken Broth
- Cajun Seasoning to Taste
Cooking Instructions
- In a heavy-bottomed pot, brown your sausage; remove and set aside, keeping the fat in the pot.
- Add the onions, celery and bell pepper to the pot and cook in the sausage fat until soft.
- Add the shredded chicken and Rotel, and season everything with the Cajun seasoning (hint: add a little more seasoning than you think you need because the rice will soak some of it up).
- Return sausage to the pot, add the rice and mix well.
- Add the chicken broth and bring to a simmer.
- Cover and allow to cook for 18 minutes; turn off heat.
- Leave covered and allow to sit for an additional 30 minutes.
- Fluff with a fork and serve.
