Big Easy Jambalaya

Ingredients

  • 2 Cans Shredded Cooked Chicken
  • 1 Onion, Diced
  • 1 Bell Pepper, Diced
  • 3 Stalks Celery, Diced
  • 1 Can Rotel, Drained
  • 1 Package Smoked Sausage, Sliced
  • 1½ Cups Rice, Uncooked
  • 3 Cups Chicken Broth
  • Cajun Seasoning to Taste

Cooking Instructions

  • In a heavy-bottomed pot, brown your sausage; remove and set aside, keeping the fat in the pot.
  • Add the onions, celery and bell pepper to the pot and cook in the sausage fat until soft.
  • Add the shredded chicken and Rotel, and season everything with the Cajun seasoning (hint: add a little more seasoning than you think you need because the rice will soak some of it up).
  • Return sausage to the pot, add the rice and mix well.
  • Add the chicken broth and bring to a simmer.
  • Cover and allow to cook for 18 minutes; turn off heat.
  • Leave covered and allow to sit for an additional 30 minutes.
  • Fluff with a fork and serve.
