Broccoli Cheddar Soup

Ingredients
- ¼ Cup Melted Butter
- ½ Cup Chopped Onion
- ¼ Cup Flour
- 2 Cups Half/Half Cream
- 2 Cups Chicken Broth
- 2 ½ Cups Chopped Broccoli
- 1 Cup Julienned Carrots
- ¼ Tsp Nutmeg
- 2 Cups Grated Sharp Cheddar Cheese
- Salt and pepper, to taste
Cooking Instructions
- Melt the butter
- Sauté the onions until soft
- Then sprinkle flour over the mixture
- Cook and stir over medium heat
- Whisk in chicken broth and half/half cream
- Add broccoli and carrots
- Cook over low heat for 20 minutes or until veggies are tender
- Season with salt and pepper, to taste
- Add sharp cheddar cheese until melted
- Enjoy!
