Broccoli Cheddar Soup

Ingredients

  • ¼ Cup Melted Butter
  • ½ Cup Chopped Onion
  • ¼ Cup Flour
  • 2 Cups Half/Half Cream
  • 2 Cups Chicken Broth
  • 2 ½ Cups Chopped Broccoli
  • 1 Cup Julienned Carrots
  • ¼ Tsp Nutmeg
  • 2 Cups Grated Sharp Cheddar Cheese
  • Salt and pepper, to taste

Cooking Instructions

  • Melt the butter
  • Sauté the onions until soft
  • Then sprinkle flour over the mixture
  • Cook and stir over medium heat
  • Whisk in chicken broth and half/half cream
  • Add broccoli and carrots
  • Cook over low heat for 20 minutes or until veggies are tender
  • Season with salt and pepper, to taste
  • Add sharp cheddar cheese until melted
  • Enjoy!
