Cajun Corn Maque Choux
Ingredients
- 1 Tbsp Olive Oil
- ½ lb. Smoked Sausage (sliced ¼" thick)
- ¼ Cup chopped Onions
- 2 lbs Sweet Cut Corn
- 1 Tbsp Garlic
- ¾ Cup Green Bell Peppers
- 1 Tsp Salt
- 1 Tsp Red Pepper
- ¾ Cup Fresh chopped Tomatoes
- 1½ Cups Heavy Cream
- ½ Cup chopped Parsley
Cooking Instructions
- In a large skillet with olive oil over medium heat, render the sausage for 10 minutes
- Add onions, corn, garlic, and peppers, stirring occasionally for 10 minutes
- Season with salt and pepper
- Add the tomatoes and cook, stirring occasionally for 15 to 18 minutes or until the corn is tender
- Stir in the cream and simmer for two to three minutes or until the sauce coats the back of spoon
- If necessary, add more salt and pepper
- Stir in parsley
- Serves 10 people
