Macaroni Salad

Ingredients

  • 1 lb Cooked Macaroni pasta
  • ½ Cup Green Onions thinly sliced
  • ½ Cup diced Tomatoes
  • ½ Cup Small purple Onion diced
  • 1 Tbsp Sugar
  • ½ Cup Mayonnaise
  • ½ Tsp Kosher Salt and Pepper

Cooking Instructions

  • In rapid boiling water, cook the dry elbow macaroni until it is al dente texture, stirring occasionally
  • Place hot, cooked pasta in an ice water bath to chill
  • Once pasta is cold, drain well
  • In a large metal mixing bowl, add the cold paste, green onions, tomatoes, purple onions, and sugar
  • Add mayonnaise and toss all ingredients until well combined
  • Season with Kosher salt and pepper
  • Serves eight people
