Macaroni Salad
Ingredients
- 1 lb Cooked Macaroni pasta
- ½ Cup Green Onions thinly sliced
- ½ Cup diced Tomatoes
- ½ Cup Small purple Onion diced
- 1 Tbsp Sugar
- ½ Cup Mayonnaise
- ½ Tsp Kosher Salt and Pepper
Cooking Instructions
- In rapid boiling water, cook the dry elbow macaroni until it is al dente texture, stirring occasionally
- Place hot, cooked pasta in an ice water bath to chill
- Once pasta is cold, drain well
- In a large metal mixing bowl, add the cold paste, green onions, tomatoes, purple onions, and sugar
- Add mayonnaise and toss all ingredients until well combined
- Season with Kosher salt and pepper
- Serves eight people
