Potato Salad
Ingredients
- 4 Baked Potatoes
- ½ Cup of Mayonnaise
- ½ Cup Dill Relish
- ½ Cup of Hard-Boiled Egg (diced)
- ½ Cup Green Onion thinly sliced
- ½ Cup of Crispy Bacon Bits
- ½ Tsp Salt and Pepper
Cooking Instructions
- Wrap potatoes in aluminum foil and cook at 400° for one hour
- Unwrap the potato once it is cool enough to handle
- Dice Potato into 1" cubes
- In a large, metal mixing bowl, add the cool potatoes, green onions, bacon bits, diced egg and relish
- Add mayonnaise and toss all ingredients until well combined
- Season with Kosher Salt and pepper
- Served six people
