Potato Salad

Ingredients

  • 4 Baked Potatoes
  • ½ Cup of Mayonnaise
  • ½ Cup Dill Relish
  • ½ Cup of Hard-Boiled Egg (diced)
  • ½ Cup Green Onion thinly sliced
  • ½ Cup of Crispy Bacon Bits
  • ½ Tsp Salt and Pepper

Cooking Instructions

  • Wrap potatoes in aluminum foil and cook at 400° for one hour
  • Unwrap the potato once it is cool enough to handle
  • Dice Potato into 1" cubes
  • In a large, metal mixing bowl, add the cool potatoes, green onions, bacon bits, diced egg and relish
  • Add mayonnaise and toss all ingredients until well combined
  • Season with Kosher Salt and pepper
  • Served six people
