Salsa Verde Chicken Casserole

Ingredients

  • 3 Large Cans Shredded Cooked Chicken
  • 1 Cup Sour Cream
  • 1½ Cups Green Salsa, Divided
  • 8 Corn Tortillas, 6”
  • 2 Cups Tomatoes, Chopped
  • 2 Cups Monterey Jack Cheese, Shredded
  • Optional Toppings: Additional Green Salsa, Avocado Slices, Thinly Sliced Green Onions and Fresh Cilantro

Cooking Instructions

  • In a small bowl, combine the chicken, sour cream and ¾ cup of salsa.
  • Spread the remaining ¼ cup of salsa on the bottom of a greased 8” square baking dish.
  • Layer with half the tortillas, chicken mixture, tomatoes, cilantro (optional) and cheese.
  • Repeat layers with the remaining ingredients.
  • Bake uncovered at 400° until bubbly, about 20-25 minutes.
  • Serve with remaining salsa and toppings of your choice.
