Southern Reuben Sandwich

Ingredients
- 1 lb. Corned Beef, Thinly Sliced
- 3 Cups Coleslaw
- 1 Cup Thousand Island Dressing
- 8 Slices Swiss Cheese
- 8 Slices Thick-Cut Wheat Bread
- ½ Cup Mayonnaise
Cooking Instructions
- Warm your skillet over medium heat.
- Spread the mayonnaise on one side of four slices of the bread and lay them mayo-side down on the skillet (you can use butter instead if you prefer).
- Spread the Thousand Island dressing on each piece of bread and cover each with a slice of Swiss cheese.
- Evenly distribute the corned beef and coleslaw between the four sandwiches.
- Drizzle more Thousand Island dressing on top and add another slice of Swiss cheese.
- Top with the four remaining slices of bread, cover with mayonnaise and flip over the sandwich to allow the other side to brown and get crispy.
- Remove from skillet, slice in half and enjoy.
