Southern Reuben Sandwich

Ingredients

  • 1 lb. Corned Beef, Thinly Sliced
  • 3 Cups Coleslaw
  • 1 Cup Thousand Island Dressing
  • 8 Slices Swiss Cheese
  • 8 Slices Thick-Cut Wheat Bread
  • ½ Cup Mayonnaise

Cooking Instructions

  • Warm your skillet over medium heat.
  • Spread the mayonnaise on one side of four slices of the bread and lay them mayo-side down on the skillet (you can use butter instead if you prefer).
  • Spread the Thousand Island dressing on each piece of bread and cover each with a slice of Swiss cheese.
  • Evenly distribute the corned beef and coleslaw between the four sandwiches.
  • Drizzle more Thousand Island dressing on top and add another slice of Swiss cheese.
  • Top with the four remaining slices of bread, cover with mayonnaise and flip over the sandwich to allow the other side to brown and get crispy.
  • Remove from skillet, slice in half and enjoy.
