Tortellini Soup


Tortellini Soup

Ingredients

  • 1 Tbsp Olive Oil
  • 1 lb Italian Sausage
  • 3 Cloves Minced Garlic
  • 2 Tsp Italian Seasoning
  • 2 Tbsp All-Purpose Flour
  • 4 Cups Chicken Stock
  • 1 Can Tomato Sauce (8 oz)
  • 1 Package of 3 Cheese Tortellini (9 oz)
  • ⅓ Cup Heavy Cream
  • 3 Tbsp Chopped Fresh Basil
  • Salt and Pepper, to taste

Cooking Instructions

  • Heat olive oil in large pot, over medium heat
  • Add Italian sausage and cook until brown
  • Crumble sausage as it cooks
  • Stir in garlic, onion, and Italian seasoning
  • Stir often until onions are translucent
  • Season with salt and pepper, to taste
  • Whisk in flour until lightly browned
  • Whisk in chicken stock and tomato sauce
  • Bring to a boil, then reduce heat to a simmer
  • Stir in 3 cheese tortellini
  • Cover and cook until tender
  • Stir in heavy cream and basil until heated
  • Enjoy!
