Wild Rice Chicken Soup

Ingredients

  • 1½ lbs. Boneless Skinless Chicken, Diced
  • 1 Onion, Diced
  • 2 Carrots, Diced
  • 3 Stalks Celery, Diced
  • 3 Tbsp. Garlic, Chopped
  • 1 8-oz. Package Mushrooms, Sliced
  • 2 Bay Leaves
  • 1 Box Seasoned Wild Rice
  • 3 Tbsp. Cooking Oil
  • 2 Tbsp. Paprika
  • 2 Tbsp. Onion Powder
  • 2 Tbsp. Garlic Powder
  • 2 Tbsp. Cumin
  • 2 Tbsp. Coriander
  • 9 Cups Chicken Broth
  • 2 Cans Tomato Juice
  • Salt and Pepper to Taste

Cooking Instructions

  • In a heavy-bottomed soup pot, heat the cooking oil and add the chicken.
  • Once the chicken is slightly browned, add the vegetables, garlic and mushrooms and cook until soft.
  • Next, add all the spices, including the spice packet from the wild rice box, and mix well.
  • Add the bay leaves, chicken broth and tomato juice.
  • Bring to a simmer and allow to cook slowly for 15 to 20 minutes.
  • Add the rice and slowly simmer for another 30 minutes.
  • Season with salt and pepper and serve.
