Wild Rice Chicken Soup

Ingredients
- 1½ lbs. Boneless Skinless Chicken, Diced
- 1 Onion, Diced
- 2 Carrots, Diced
- 3 Stalks Celery, Diced
- 3 Tbsp. Garlic, Chopped
- 1 8-oz. Package Mushrooms, Sliced
- 2 Bay Leaves
- 1 Box Seasoned Wild Rice
- 3 Tbsp. Cooking Oil
- 2 Tbsp. Paprika
- 2 Tbsp. Onion Powder
- 2 Tbsp. Garlic Powder
- 2 Tbsp. Cumin
- 2 Tbsp. Coriander
- 9 Cups Chicken Broth
- 2 Cans Tomato Juice
- Salt and Pepper to Taste
Cooking Instructions
- In a heavy-bottomed soup pot, heat the cooking oil and add the chicken.
- Once the chicken is slightly browned, add the vegetables, garlic and mushrooms and cook until soft.
- Next, add all the spices, including the spice packet from the wild rice box, and mix well.
- Add the bay leaves, chicken broth and tomato juice.
- Bring to a simmer and allow to cook slowly for 15 to 20 minutes.
- Add the rice and slowly simmer for another 30 minutes.
- Season with salt and pepper and serve.
